Dil Pasand Seekh
The first dish on our meal ideas list is the crispy and crunchy Dial Pasand Seekh.
Serves: 2
Prep time: 30 minutes
Ingredients:
50 g roasted channa powder
5 g salt
5 g mace powder
100 g desi ghee
5 g green cardamom powder
5 g coriander powder
20 g mint
5 g kasoori methi
5 g jeera powder
20 g coriander
5 g garam masala
5 g yellow chilli powder
15 g ginger, grated
15 g green chillies, grated
100 g soy granules, soaked in water
150 g French beans, grated
200 g potatoes, boiled and grated
300 g carrots, grated
300 g cauliflower, grated
Method:
- Begin by chopping all the vegetables.
- Heat desi ghee in a pan. Add vegetables.
- Saute till all the vegetables are 80 percent cooked.
- Remove on a tray and let them cool.
- Add grated potatoes and mix well.
- Add seasoning and roasted channa powder.
- Make equal-sized rolls. Skewer.
- Roll in soy granules until completely coated.
- Cook until golden glazed in a tandoor.
- Serve these piping hot kebabs with good-old tangy mint chutney.
Gucchi or Khumb Da Kamal
The second dish on our meal ideas list is the juicy Gucchi or Khumb Da Kamal.

Prep time: 30 minutes
Ingredients:
40 ml refined oil
Salt, to taste
5 g garam masala
5 g turmeric powder
20 g mint
5 g red chillies
20 g green chillies
20 g coriander
50 g paneer, grated
20 g garlic
20 g ginger
5 g coriander seeds
5 g cumin seeds
20 g sesame seeds
5 g whole red chillies
5 g curry leaves
20 g peanuts
50 g dry coconut powder
200 g button mushrooms
40 g morsels
Method:
- Wash morels under running water.
- Take out the stem of mushrooms.
- In a bowl, mix all the spices, green chillies, mint, and coriander.
- Stuff this mixture in the morels.
- In another bowl, make a paste of curry leaves, sesame seeds, peanuts, and coconut.
- Heat oil in a wok.
- Add ginger-garlic paste and stir for a few minutes.
- Add coconut paste and cook until it begins to sweat.
- Mix in the stuffed morels and mushrooms in the gravy and cook for about 10 minutes.
- Sprinkle garam masala on top.
- Serve hot with rice or naan.
Achari Aloo
The third dish on our meal ideas list is Achari Aloo – our all-time favorite main-course dish.

Ingredients:
5 g coriander powder
5 g red chilli powder
30 g mustard oil
5 g turmeric powder
5 g mustard seeds
Salt, to taste
5 g methi seeds
5 g saunf
500 g baby potatoes, peeled and boiled
Method:
- Heat mustard oil in a wok.
- Temper with saunf, methi seeds, and mustard seeds.
- Add boiled potatoes and cook for a few minutes.
- Add red chilli powder, coriander powder, and salt.
- Saute for a few minutes.
- Garnish with coriander sprig and serve hot with rice or naan.
Methiwali Gobhi
The fourth dish on our meal ideas list is Methiwali Gobhi – the humble main-course dish.
Serves: 2
Prep time: 30 minutes
Ingredients:
5 g turmeric powder
5 g jeera powder
Salt, to taste
5 g garam masala
5 g coriander powder
30 g refined oil
5 g red chilli powder
20 g ginger, finely chopped
10 g green chillies, finely chopped
5 g cumin seeds
20 g fresh coriander, finely chopped
50 g tomatoes, finely chopped
25 g kasoori methi
600 g cauliflower florets
Method:
- Heat oil in a wok. Temper with cumin and add cauliflower once it begins to crackle.
- Saute for 10 minutes before adding the tomatoes. Continue to cook for a few minutes.
- Add all the spices and chopped ginger, green chillies, and coriander. Cover.
- Garnish with ginger juliennes and green chillies.
- Serve with roti or naan.

The fifth dish on our meal ideas list is a simpler version of the popular Peshawari Kebab.

Prep time: 3 hours
Ingredients:
5 g shahi jeera
5 g cardamom powder
Salt, to taste
5 g mace powder
5 g jeera powder
100 g malt vinegar
5 g coriander powder
5 g red chilli powder
100 g curd
50 g refined oil
200 g raw papaya, paste
150 g ginger-garlic paste
700 g mutton cubes, boneless
Method:
- Clean and wash the mutton.
- Marinate with ginger-garlic paste, malt vinegar, papaya paste, and salt.
- Set aside for 2 hours.
- Mix all spices in the curd.
- Add in the mutton.
- Set aside for 1 hour until its tender.
- Skewer. Cook in a tandoor.
- Serve with mint chutney.
Chanyot Da Murgh Chandi Kebab
The last dish on our meal ideas list is Chanyot Da Murgh Chandi Kebab. A protein-rich chicken recipe that’s guaranteed to leave you speechless (and satiated).

Ingredients:
30 ml lemon juice
2 sheets silver warque
Salt, to taste
10 g ginger-garlic paste
5 g green cardamom powder
5 g green chillies
100 g curd
5 g white pepper
200 ml single cream
100 g processed cheese
600 g boneless chicken (preferably thighs)
To serve:
Onion juliennes
Method:
- Thoroughly clean and wash the chicken.
- Marinate the chicken in ginger-garlic paste and lemon juice.
- Mash processed cheese.
- Add cream and curd. Make a paste.
- Add the marinated chicken to this paste along with the seasoning.
- Skewer and cook in a tandoor.
- Arrange chicken on a plate.
- Line with silver warque.
- Serve with mint chutney and onion juliennes on the side.
