As the temperature rises again, these healthy soup recipes will keep you cool.
1. Cherry Tomato Soup
Ingredients:
4 cloves garlic, minced
Salt and pepper, to taste
3 tbsp fresh basil, chopped
½ cup onion, chopped
3 tsp olive oil
5 cups cherry tomatoes
Method:
- Oven roast the cherry tomatoes for 15 minutes.
- Heat the oil in a pan over medium flame. Add the pepper, salt, oregano, and onion. Cook for four minutes.
- Add the garlic and cook for another minute. Set aside to cool for a few minutes.
- Blend together the basil onions and cherry tomatoes until smooth.
- Chill for an hour and serve cold with croutons.
2. Zucchini Soup
Ingredients:
Salt and pepper, to taste
3 tbsp cream
3 cups vegetable stock
800 g zucchini, cubed
2 medium onions, chopped coarsely
2 tbsp extra virgin olive oil
Method:
- Heat the oil in a pan over a medium flame. Add the onions, and cook for five minutes until softened.
- Add the zucchini and cook until it sizzles. Stir in the stock, bring to a boil, and simmer for 10 minutes until the zucchini is tender. Blend the soup in small batches.
- Rewarm in the pan, season to taste, and whisk in the cream. Chill an hour before serving.
3. Watermelon Soup
Ingredients:
1 tbsp honey
1 tbsp mint, chopped
2 tbsp lemon juice
4 cups watermelon cubes (deseeded)
Method:
- Blend all the ingredients together.
- Chill for two hours and serve cold.
