Cold Comfort: 3 Wholesome Cold Soup Recipes

As the temperature rises again, these healthy soup recipes will keep you cool. 

 

1. Cherry Tomato Soup

Cherry Tomato Soup

Ingredients:

4 cloves garlic, minced

Salt and pepper, to taste

3 tbsp fresh basil, chopped

½ cup onion, chopped

3 tsp olive oil

5 cups cherry tomatoes

 

Method:

  1. Oven roast the cherry tomatoes for 15 minutes. 
  2. Heat the oil in a pan over medium flame. Add the pepper, salt, oregano, and onion. Cook for four minutes.
  3. Add the garlic and cook for another minute. Set aside to cool for a few minutes.
  4. Blend together the basil onions and cherry tomatoes until smooth.
  5. Chill for an hour and serve cold with croutons.

 

2. Zucchini Soup

Zucchini Soup

Ingredients:

Salt and pepper, to taste

3 tbsp cream

3 cups vegetable stock

800 g zucchini, cubed

2 medium onions, chopped coarsely

2 tbsp extra virgin olive oil

 

Method:

  1. Heat the oil in a pan over a medium flame. Add the onions, and cook for five minutes until softened.
  2. Add the zucchini and cook until it sizzles. Stir in the stock, bring to a boil, and simmer for 10 minutes until the zucchini is tender. Blend the soup in small batches.
  3. Rewarm in the pan, season to taste, and whisk in the cream. Chill an hour before serving.

 

3. Watermelon Soup

Watermelon Soup

Ingredients:

1 tbsp honey

1 tbsp mint, chopped

2 tbsp lemon juice

4 cups watermelon cubes (deseeded)

 

Method:

  1. Blend all the ingredients together.
  2. Chill for two hours and serve cold.
