Basic Vinaigrette
You’ll need:
Pepper
⅔ cup extra virgin olive oil
¼ tsp salt plus extra
3 tsp spring onion, minced
6 tsp Dijon mustard
¼ cup red wine vinegar
Method:
- Mix together the salt, spring onion, Dijon mustard and red wine vinegar.
- Slowly drizzle in the olive oil and continue whisking. Season.
Balsamic
Substitute balsamic vinegar instead of red wine vinegar in the above-mentioned recipe.
Herby
Sprinkle a few tablespoons of fresh (chopped) dill, chives or parsley to the basic vinaigrette recipe.
Orange-y
