This all-time favourite South Indian dish, is an easy delight to cook up inside your microwave oven. Tasty and sumptuous, this Upma can be enjoyed with green chutney or a little sambhar.

Ingredients:
Salt, to taste
½ cup roasted nuts
2 ½ cup water
1 tbsp washed split black gram
8-10 curry leaves
2 red chilli whole (dry)
1 tsp mustard seeds
3 tsp oil
1 cup of mixed vegetables
1 cup semolina (Rava)
Coriander leaves, to garnish
Directions:
- Roast the semolina in a microwave-safe bowl by cooking it on high for 3 minutes. Stir once or twice and keep aside.
- In the same bowl, mix all mustard seeds, split black gram, red chillis and curry leaves. Cook uncovered on high for 2 minutes.
- Add semolina, nuts, vegetables, salt and water. Cook uncovered on high for 4-5 minutes. Stir once or twice in between. Garnish the Upma with coriander leaves and serve hot with green chutney.
Note: For roasting of nuts, keep groundnuts on a flat microwave-safe dish on high for 3-4 minutes. Stir occasionally.
