1. Pomegranate-Orange Mocktail

Ingredients:
30 ml club sods
15 ml fresh lime juice
30 ml orange juice
60 ml pomegranate juice
Ice cubes, to serve
Pomegranate arils, to garnish
Rosemary sprig, to garnish
Method:
- Fill a tall glass halfway with ice cubes.
- Add the lime juices and pomegranate juice. Mix well.
- Pour in the soda and garnish with the pomegranate arils and rosemary sprigs.
- Serve immediately.
2. Pomegranate-Brie Crostini

Ingredients:
½ cup pomegranate seeds
250 g brie, cut into 20 slices
¼ tsp salt
½ tsp black pepper
½ cup honey
Olive oil spray
20 slices of baguette
Method:
- Rub the baguette slices with olive oil and toast lightly.
- Warm the salt, pepper and honey in a small pan.
- Place a slice of brie on each baguette slice, drizzle with the honey mixture and top with pomegranate seeds.
3. Pomegranate-Sweet Potato Salad
Ingredients:
½ cup feta cheese, crumbled
½ cup pumpkin seeds,
1 cup pomegranate arils
Pepper powder, to taste
Salt, to taste
3 tsp olive oil
4 cups sweet potato cubes
Basil leaves, to garnish
Method:
- Place the sweet potato cubes on a baking sheet, drizzle with olive oil, pepper and salt. Toss to coat. Roast in a preheated oven for 30 minutes, stirring occasionally, until tender.
- Remove the oven. Place in a bowl with the feta cheese, pumpkin seeds, and pomegranate arils.
- Whisk the dressing ingredients in a bowl. Drizzle over the salad and toss. Serve garnished with basil leaves.
