  1. To start making your perfect salt and pepper chicken wings, heat some vegetable oil in a pot on medium to high heat.
  2. Prepare the coating mixture for the wings by whisking 1 1/3 cup of all-purpose flour, 2tbsp of cornstarch and 1 1/3 cup of water in a bowl.
  3. Pat the wings dry with a paper towel and proceed to coat in the whisked ingredients.
  4. Add around 6-8 pieces of chicken to the oil and leave to fry for 8 minutes.
  5. Drain the fried wings on a paper towel and add them again to the oil for 8 minutes until golden and crunchy.
  6. Add olive oil to a wok on medium heat and cook minced garlic until lightly browned.
  7. Sprinkle in the seasoning, add 1 bunch of green scallions, and cook on low heat for approximately one minute. With the heat turned off, mix the fried chicken in with the wok contents and serve.
