Incredible Soup Accompaniments

1. Potato Croutons

Preparation time: 10 minutes

Cooking time: 10 minutes

Serves: 6

 

Ingredients:

Salt, to taste

Pepper, to taste

Oil for deep frying

2 potatoes

 

Method:

  1. Parboil the potatoes.
  2. Drain, peel and cut into small cubes while hot.
  3. Deep fry in oil.
  4. Sprinkle with pepper and salt.
  5. Serve hot as sides for soup party.

 

2. Garlic Croutons

Preparation time: 10 minutes

Cooking time: 10 minutes

Serves: 4

 

Ingredients:

Pepper, to taste

Salt, to taste

Chilli powder (optional)

Oil, for frying

3 slices white bread

1 clove garlic

 

Method:

  1. Crush the garlic.
  2. Remove the crusts from the bread slices and cut the bread into small cubes.
  3. Heat the oil. When hot, add the bread cubes and cook whilst stirring constantly.
  4. When the cubes start to turn colour, add the garlic and mix well.
  5. Remove and drain when the cubes are golden brown in colour.
  6. Sprinkle pepper, salt, and chilli powder.
  7. Serve hot.

 

3. Cheese Fingers

Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 4

 

Ingredients:

Salt, to taste

Pepper, to taste

Chilli powder (optional)

3-4 tbsp cooking cheese, grated

A little mustard

2 tbsp butter

2-3 slices white bread

 

Method:

  1. Toast the bread slices on one side only.
  2. Allow to cool.
  3. Apply butter and spread some mustard on the untoasted side. Sprinkle thickly with grated cheese and a little salt and pepper.
  4. Grill until the cheese has melted and browned. Sprinkle a little chilli powder.
  5. Cut into squares or fingers and serve hot.

 

4. Parsley Twist

 

Preparation time: 25 minutes

Cooking time: 15 minutes

Makes about 25 twists

 

Ingredients:

2 pinches salt

2 pinches curry powder

3 tsp onion, finely chopped

2 tbsp parsley, chopped

55 g butter

115 g plain flour

 

Method:

  1. Apply the butter on the floor.
  2. Add water, salt, curry powder, onion, and parsley to make a dough.
  3. Roll out the dough and cut into strips about 50 mm. × 12 mm. Either twist the strips in the centre or pinch.
  4. Arrange the twists on an ungreased baking tin and bake in a hot oven at 450° F for 10-12 minutes.
  5. Serve hot or cold with soup.
