1. Corn Chat
A tangy Indian take on corn.

Ingredients:
2 tsp lemon juice
1 tsp chaat masala powder
¼ tsp red chili powder
3 tsp coriander leaves, finely chopped + extra for garnishing
1 green chilli, finely chopped
1 medium tomato, finely chopped
Salt, to taste
1 cup corn kernels, boiled
1 small onion, finely chopped
Sev, for garnishing
Method:
- Mix the boiled corn with lemon juice, chaat masala powder, red chilli powder, coriander leaves, green chilli, tomato, onion, and salt. Season to taste.
- Serve, topped with sev and coriander leaves.
2. Crispy Corn
These fried corn kernels are a tasty indulgence.
Ingredients:
Salt, to taste
1 tsp soy sauce
1 tsp white vinegar
¼ cup tomato sauce
¼ cups spring onions, finely chopped + extra for garnish
3 tsp chilli sauce
2 green chillies, finely chopped
3 cloves garlic, finely chopped
2 tsp oil
Oil, for deep frying
½ tsp ginger-garlic paste
3 tsp water
2 tbsp cornflour
2 tbsp flour
1 cup sweet corn kernels
Method:
- Mix the ginger-garlic paste, water, pepper, salt, cornflour, flour, and corn kernels.
- Heat oil in a deep frying pan on a medium-high flame and fry the kernels until golden brown. Remove from the oil, drain and set aside.
- Heat two teaspoons oil in another pan over a medium flame and add the green chillies and garlic and saute for a few seconds. Add the spring onions and saute on a medium flame for a few seconds. Stir in the vinegar, soy sauce, chilli sauce, tomato sauce, salt and deep-fried corn. Saute for one minute.
- Garnish with chopped spring onions and serve immediately.
3. Corn Fritters
This is one of our favourite corn recipes because it makes for great snacks on any given day!

Ingredients:
2 tbsp olive oil
1 ½ cup cheese, shredded
¼ cup milk
2 eggs, beaten
¼ tsp chilli powder
¼ tsp pepper powder
1 tsp baking powder
½ tsp salt
1 cup flour
3 tsp lime juice
1 green chilli, finely chopped
¼ cup spring onion greens, finely chopped
¼ cup coriander, finely chopped
3 cups fresh corn kernels
Method:
- Mix the lime juice, green chilli, spring onion greens, coriander and corn. Set aside.
- Stir together the flour, chilli powder, black pepper, salt, and baking powder. Mix into the corn and add cheese, milk and eggs.
- Heat a pan over a medium-high flame. Add a little olive oil to coat. Put a scoop of batter into the oil and press gently to create a fritter shape. Cook for three minutes until the edges start to turn golden. Flip and cook the other side until golden. Drain. Repeat with the remaining batter.
- Serve warm with a lemon wedge, sour cream and salsa.
